No, too much money for a cat c I see, what would be a decent price to try and haggle with do you think, the guys were proper cockneys on the phone, so it would take some haggling as im a soft westcountry lad lol IMO it has to come in at under 5k for any chance of getting your money back, but if your not bothered about that then buy it mate. I have mate, I think it might be a bit big for me. I'm yet to see a proper full picture of one fitted. If I can't find the one I want then I may look at alternatives

Nothing you can do with regards to her wanting to go through the insurance. She is also entitled to go to a garage of her choice unfortunately, it is down to your insurance assessor to authorise the repairs. Its out of your hands without any photographic evidence. If you have the other partys address you could get some sneaky pics whilst its on the public road. Other than that all you can do is make your insurance company aware that you think they are pulling a fast one and they will give the assessor a heads up.
